We use parchment for every Baked & Bouquets cookie. It fits our baking routine and is the liner we prefer against the dough.

We have not run our own side-by-side silicone-mat test. Published baking tests found differences in spread, browning, and texture, but their outcomes vary by dough and test setup.

Many nonstick parchment papers also have a silicone coating. Our choice of parchment is a preference, not proof that silicone mats are unsafe or that parchment is silicone-free.
